Cleaning Cast Iron Skillets

 
Cast iron skillets require some special care when cleaning. Due to the properties created by seasoning, cast iron should not simply be placed in the dishwasher or scored heavily like other pans.  Heavy scouring or using a dishwasher can remove the layer of seasoning. 
 
Some chefs swear by never washing their skillet but simply wiping it down after each use.  Not everyone agrees with that and many prefer to clean their skillet with mild soap and water or hot water and a stiff brush.  This will help prevent grease left on the pan from becoming rancid.  If you find you have removed some of the seasoning you can simply apply more grease or oil and heat the skillet.
